Ingredients
- 1.54 lbs potatoes
- 10.58 Portobello mushrooms (mixed, or porcini)
- 3.53 oz bacon
- to taste salt
- to taste garlic powder
- 1 sprig rosemary
How to Make Woodcutter’s Potatoes
Wash and peel the potatoes, then cut them into not too large wedges, soak them in cold water with a pinch of baking soda, and let them rest for 30 minutes.
Drain them and pat them dry well with a kitchen paper towel, then transfer them to a bowl and season with oil, salt, pepper, and garlic.
Place them on a baking tray lined with parchment paper and add the diced bacon. Bake them in a static mode oven at 374°F for about 35 minutes.
In the meantime, clean and cut the mushrooms, after the baking time add them to the potatoes and continue cooking for another 6-7 minutes. Take everything out of the oven and serve on a serving plate. If you like, you can add a sprinkle of chopped parsley or rosemary.
Storage and Tips on Woodcutter’s Potatoes
The potatoes can be stored in an airtight container until the next day. If you prefer, you can replace the bacon with speck or diced ham, however, in this case, add it together with the mushrooms. For mushrooms, you can use any you prefer: porcini, pioppini, or simply champignon.
