How to prepare air fryer eggplant mushroom style

  • Let’s start preparing the air fryer eggplant mushroom style, wash and trim the eggplants, then cut them into pieces of about 3/4 inch. If you want, you can also add a few tablespoons of tomato sauce, I prefer them plain.

  • Place the eggplants in an air fryer-safe tray, finely chop a garlic clove, or press it with the appropriate tool, add the garlic to the eggplants, a few sprays of extra virgin olive oil, add some salt, pepper, and a few hand-torn basil leaves, mix everything well to season the eggplants properly.

  • Put the tray in the air fryer basket and cook at 392°F for 20 minutes, halfway through cooking, remove the basket and mix the eggplants well, close and continue cooking.

  • When the air fryer eggplant mushroom style is ready, open the basket, remove the tray, mix and adjust salt before serving.

How to store air fryer eggplant mushroom style

Store them in the refrigerator for 2/3 days, or you can freeze them.
