- 1 lb 2 oz lbs Potatoes

Preparation
Let’s start preparing the Pan-fried Potato Cake with Bellafesta Light Clai Salami. Slice the smoked provolone thinly, wash and peel the potatoes, steam them, or boil them without peeling. Once the potatoes are cooked, mash them with a potato masher without waiting for them to cool. Add the flour, Parmigiano, egg, pepper, and adjust salt. Mix well to get a homogeneous mixture.
Heat a non-stick pan and grease it with extra virgin olive oil. Divide the potato mixture into two parts, and when the pan is hot, put one part of the mixture in the pan and press it with your hands to cover the entire pan. Spread the smoked provolone and Bellafesta Clai salami over the mixture, keeping the edges clear. Cover with the remaining mixture, sealing the edges to prevent the filling from escaping.
