The coconut plum cake is a perfect dessert for breakfasts and snacks, few and simple ingredients are the strong point of this soft and fragrant dessert! As you will read in the ingredients, I used stevia as a sweetener, but you can easily replace it with sugar, and you’ll find all the details! Ingredients for the coconut plum cake
- 3 eggs (XL size)
- 2 cups all-purpose flour (or an equal amount of low glycemic index flour)
- 1 cup semi-skimmed milk
- 3/4 cup coconut flour
- 1/4 cup stevia (or 3/4 cup of granulated sugar or brown sugar or erythritol)
- 3 tbsps extra virgin olive oil
- 1 packet baking powder

Preparation of the Coconut Plum Cake
In a bowl, pour the eggs, stevia (or sugar), milk, and oil. Mix with a spoon for a few minutes until a homogeneous mixture is obtained (it only takes a few minutes).
Now add the coconut flour and mix it with the rest of the mixture, set aside.
In a clean bowl, sift well the flour and baking powder, and mix the powder mixture.
Add the powder mixture to the liquid mixture prepared earlier (with eggs, stevia, oil, etc.), and stir with a clean spoon from bottom to top until a moderately thick and lump-free mixture is obtained.
Oil and flour the plum cake mold, pour the mixture inside using a silicone spatula, level it, and oil one side of the spatula, then make (with the oiled side) a cut in the center of the mixture, this will give the classic plum cake opening on the surface.
Preheat the oven to 428°F and once hot, bake for 35 minutes, but at the end of baking, always do the toothpick test because ovens are not all the same! Once the coconut plum cake is cooked, take it out and let it cool before removing it from the mold.
Once the plum cake is well chilled and removed from the mold, you can serve it in slices decorated with coconut flour and fresh mint leaves if you like! Enjoy your meal!
