To prepare these cream puffs, I used Milano Clai Salami, a fine salami typical of the Milan area, whose origins date back to the Renaissance period. Preparation
Let’s start preparing the Savory cream puffs filled with cheese and Milano Clai salami by first washing the chives and cutting each puff in half and setting them aside.
Place the spreadable cheese in a dish, add a pinch of salt and pepper, and the extra virgin olive oil.
Finely chop the chives and add them to the cheese, mix everything with a fork until you get a homogeneous cream.
With a teaspoon, put the cheese cream on the base of the puff, take a slice of Milano salami, fold it into quarters and place it on top of the cheese
add additional cheese and close with the top of the puff.
