Ingredients for Mascarpone Fritters
- 8.8 oz Mascarpone
- 4 tablespoons Sugar
- 3 Eggs
- 1.7 cups Flour
- 1 packet Baking Powder
- 1.75 oz Raisins
- 1 vial Rum (optional)
- Peanut Oil
- Powdered Sugar
How to Prepare Mascarpone Fritters
Let’s start preparing the mascarpone fritters, soak the raisins in hot water and leave them to soak for 10 minutes. After soaking, drain and squeeze them well.
Pour the sugar and mascarpone into a bowl and mix well with a fork to obtain a cream. Add the flour, eggs, baking powder, rum vial, and well-squeezed raisins. Mix well with a fork until you get a homogeneous dough.
Pour the peanut oil into a pot and heat the oil to about 356°F. If you don’t have a thermometer, check when the temperature is right for frying with a wooden stick. If bubbles form around it, the oil is ready to be used.
With a teaspoon, scoop the dough and drop it into the hot oil, helping it detach with the other teaspoon.
When the Mascarpone Fritters are golden, drain them with a slotted spoon and let them dry on absorbent paper. When you’ve cooked them all, add the powdered sugar.
