Braised cabbage with sausage is a delicious traditional dish from Veneto. In dialect, ‘sofegae’ means suffocated, as the cooking involves using a lid that ‘suffocates’ the cabbage during cooking. It’s a humble dish from the Venetian rural tradition, served as a side dish or with the addition of sausage, pancetta, or cotechino, becoming a main course.

Ingredients to prepare Braised Cabbage with Sausage
- 1 Cabbage
- 1 Onions
- Clai Homemade Sausage
- 4 tablespoons Extra virgin olive oil
- Salt
- Pepper

Preparation
Let’s start preparing the Braised cabbage with Clai homemade sausage. Remove the outer leaves of the cabbage that might be damaged. Slice it thinly using a sharp knife, also clean the onion and slice it finely.
Pour 4 tablespoons of extra virgin olive oil into a large pan, add the onion, and sauté for a few minutes. Then add the cabbage, salt, and pepper, and cover with a lid so that the cabbage cooks in its own moisture.
Occasionally lift the lid and stir, and if necessary, add a little broth. Always cook on low heat for 30 minutes; the characteristic feature is that the cooking is slow.
In the meantime, cut the Clai homemade sausage into medium-thick pieces and then into cubes. After half an hour of cooking the cabbage, add the Clai homemade sausage and continue cooking for another 15 minutes. Now the Braised cabbage with Clai homemade sausage is ready to be served hot.
