How to Make Eggs with Zucchini
Let’s start preparing the eggs with zucchini, cut the ends of the zucchini, wash them and then cut them into two or three parts if they are very large. Use the appropriate tool to obtain zucchini spaghetti or slice them thinly, julienne them, or cube them.
Clean the garlic and parsley, then place the garlic clove in a pan,
add the oil and let it slightly flavor.
Add the zucchini,
some chopped parsley,
a pinch of salt and cook for a few minutes.
Slightly move the zucchini to create space for the eggs,
crack the eggs and pour them into the spaces,
add some salt,
some pepper,
and cook until the egg whites have set, the yolk cooking varies depending on your taste and habits, as I, for example, like it soft. When the eggs with zucchini are ready, serve them hot, accompanied by slices of bread for dipping.
