Baked pumpkin, potatoes and sausage is a delicious complete dish, I often prepare it during the autumn season when the pumpkin is in season and very tasty. The pumpkin with the sausage is easily prepared in the oven, you can also prepare it in advance and heat it up when serving, add some potatoes that pair perfectly with the ingredients. Be sure to pick a quality pumpkin to achieve the best results. For my pumpkin recipes, I love using violina, mantovana, or Chioggia pumpkins as they have a sweet taste and firm texture.
