Cookies with Dried Fruit without Eggs and Butter

Today I leave you my recipe for my Cookies with Dried Fruit without Eggs and Butter, surprisingly good! Their crumbly texture and enveloping aroma make them perfect for breakfast, an afternoon break, or to be gifted in a decorated bag.

Like for the Fake Cookies and the Yogurt Cookies preparing them is very easy: one bowl, a few ingredients, 10 minutes of work and they will be ready in no time! The Cookies with Dried Fruit without Eggs and Butter are kneaded by hand, shaped into cookies and immediately baked, no waiting and no resting of the dough. If you want to make them even more delicious like me, enrich them with chocolate chips. To speed up cooking even more, I cooked them in a Air Fryer, but they can also be baked in the oven.

These cookies prove that even with few ingredients and without eggs or butter, you can achieve delicious and fragrant sweets. Let’s see together how they are prepared

Ingredients

Ingredients for 18 cookies

  • 1 1/3 cups all-purpose flour
  • 1/2 cup sugar
  • 3 1/2 tbsp milk
  • 3 1/2 tbsp vegetable oil (sunflower or corn)
  • 1.5 oz hazelnuts
  • 1.5 oz almonds
  • 0.7 oz pistachios
  • 1/2 packet baking powder (about 8 g)
  • 1 pinch salt
  • 1.8 oz dark chocolate chips

Steps

How to prepare the Cookies with Dried Fruit without Eggs and Butter

  • Coarsely chop the dried fruits and pour them into a bowl with the rest of the ingredients

  • Mix with your hands until you get a soft but compact dough
    You will form a small loaf

  • Take small pieces of dough and form balls the size of a walnut

  • Preheat the fryer for 2/3 minutes at 340°F, set to bake or air fry. Place the cookies on the tray or grid of your air fryer basket and press them lightly with your hands

  • Bake at 340°F for 10/12 minutes until they are golden on the surface. Once ready, let them cool a bit before removing them from the grid or tray. They will be soft just after baking but will harden and become crunchy once cooled.

  • Here they are ready for a nutritious breakfast or to accompany a warm afternoon tea😋

Storage and Variants of Cookies with Dried Fruit without Eggs and Butter

Cookies with dried fruit can be stored for about 3/4 days in an airtight container or a tin box

You can add and replace a part or all the variety of dried fruits you prefer or have available, or substitute part of them with walnuts.

The chocolate chips are optional, I used dark ones but milk chocolate or white chocolate chips are also fine, or make a mix of white and dark. If you prefer a slightly less caloric version, you can replace the chocolate with 30 g of raisins.

Baking Cookies with Dried Fruit in the Oven

Preheat the oven until it reaches temperature and bake the Cookies with Dried Fruit in fan mode at 340°F for 10/12 minutes and static at 355°F for 15 minutes.
