I couldn’t wait to offer you my version of the Potato Gateau, and I finally managed to add the recipe with air fryer cooking to the blog. Perfect as a main dish, second course or hearty side dish, this gateau is creamy on the inside and crunchy on the outside… without any sacrifices!
The Potato Gateau is a dish of our Italian tradition, with many versions, but the most known and representative is undoubtedly the Neapolitan one. What I propose to you is the version that my mom has always made and still makes, where I only made a small modification (besides cooking in the air fryer) by adding a bit of milk, achieving a potato gateau even creamier on the inside.
Potatoes are very versatile, I love them and they lend themselves to many preparations that range from first courses to sides to accompany our second courses.
Now let’s see how to prepare the Potato Gateau in the Air Fryer, but I will also leave you at the end of the recipe the cooking times and degrees if you choose to bake it.

Ingredients
INGREDIENTS FOR 4 SERVINGS
- 23 oz potatoes
- 1 egg
- 1/4 cup milk
- 3.5 oz cooked ham
- 5.3 oz soft table cheese (I use fresh caciotta)
- 1.75 oz Grana Padano cheese, grated (or Parmesan)
- to taste salt and pepper
- to taste nutmeg
- to taste extra virgin olive oil

- 1 multicooker for cooking the potatoes
- 1 Bowl
- 1 Knife
- 1 Cutting Board
- 1 Fork
- 1 Spoon
- 1 Baking Dish (mine is square Pyrex 9×9 inches)
Steps
How to prepare Potato Gateau in Air Fryer
Cooking the potatoes in a pot: wash, peel, and cut the potatoes into chunks. Boil them until they are soft. You can also boil them whole with the skin and mash them with a potato masher without peeling. Use the method most convenient for you.
Cooking the potatoes in a multicooker: wash, peel, and cut the potatoes into chunks. Place them in the combi tray with 1 liter of water.
Set the switch to combi cooker mode and start the steam program for 10 minutes.
Once ready, drain and transfer them to a bowl
Mash them while still warm, using a fork to obtain a homogeneous puree. Set aside to cool for a few minutes
Meanwhile, work on the filling: cut the cooked ham first into strips then into cubes
Do the same with the cheese
Add them to the potato puree and add the egg, salt, pepper, a grating of nutmeg, and milk
Mix the mixture well
Grease or butter a suitable dish for the fryer (mine is Pyrex) and cover it with breadcrumbs. Pour in your gateau mixture
Level well with a spoon and score the surface with the tines of a fork
Sprinkle the surface with breadcrumbs and a drizzle of olive oil.
Insert the dish into the fryer and cook at 356°F for 18 minutes
For an extra crust, increase to 392°F for 3 minutes, or if you have the grill program, activate it for 2 minutes.
Remove the gateau from the oven and let it
Irresistible with the crust on the surface and its creamy interior 😍
Serve your Potato Gateau after letting it cool for a few minutes to settle. Even better with time as the flavors meld together more.

Baking the Gateau
Preheat the oven to 392°F and bake for about 20/25 minutes for extra browning activate the grill for 2/3 minutes
Variations and Tips
Replace caciotta or the cheese with mozzarella, remember to insert it well drained of its whey
You can add a tablespoon of breadcrumbs for a more compact mixture
For a vegetarian version replace the cooked ham with sautéed vegetables
If you are lactose intolerant you can omit the milk, although I recommend it for a creamier mixture, or use lactose-free milk. The same goes for cheeses, and use a well-aged Grana Padano or Parmesan preferably 30 months
You can prepare it in multiple stages by boiling the potatoes in the morning and assembling and cooking it later
Regarding the dish… for this recipe, I used a Pyrex dish, you can use a non-stick dish that fits your fryer. I do not recommend silicone molds as they are not good heat conductors and would keep the base very moist, prefer aluminum and non-stick dishes especially if you have a mono-resistance fryer
Storing Potato Gateau
The Potato Gateau can be kept in its dish in the refrigerator for a couple of days well covered with plastic wrap and heated in the fryer or oven for a few minutes before serving
