- 2 heads Radicchio

How to make the Radicchio Omelet
Let’s make the radicchio omelet. First, clean the radicchio by removing the outer ugly leaves, wash and finely chop it, clean the onion and chop it too. Pour 3 tablespoons of extra virgin olive oil into a non-stick pan, add the chopped onion, and slightly brown it, then add the radicchio, season with salt and pepper, and cook for about 10 minutes, stirring occasionally.
Pour the eggs into a bowl, add a pinch of salt, pepper, a drizzle of extra virgin olive oil, and beat with a fork for a few minutes.
When the radicchio is cooked, spread it all over the pan and add the beaten eggs, move the pan so that the eggs cover the entire surface and leave it on the heat. When you see that the omelet is cooked on the bottom, detach it with the help of a wooden spoon and slightly move the pan, leaving it on the heat.
