VEGAN CREPES BASIC RECIPE FOR SWEET AND SAVORY

Ingredients to prepare Vegan Crepes

  • 1 and 3/4 cups Flour
  • 1 tbsp Sunflower seed oil
  • 2 and 1/4 cups Soy milk (unsweetened)
  • 1 tsp Turmeric powder
  • 1 pinch Salt

How to prepare Vegan Crepes

  • Let’s start preparing the batter for the vegan crepes by placing the flour, turmeric, and salt in a bowl, and mix all the dry ingredients. Now add the sunflower seed oil and gradually the soy milk to achieve a thick but lump-free mixture, now continue stirring while adding the remaining milk.

  • Cover the bowl with plastic wrap and let the batter rest in the refrigerator for at least half an hour.

  • Now that the vegan crepes batter has rested, we can proceed with cooking. You can use a crepe maker if you have one or use a non-stick pan.

  • Heat the non-stick pan, it should be very hot or use the crepe maker. Use a ladle as a reference dose and pour it into the pan, move it so that the mixture is evenly distributed throughout the pan, or if using the crepe maker pour it in the center (photo 2) and spread it with the appropriate tool (photo 3).

  • Cook it for about a minute or until it separates from the edges, flip it and leave it for another minute. Now place it on a plate and continue this way until the batter is finished. You can store them in the fridge for a few days or even in the freezer.
