Ingredients to prepare Mushroom Dumplings

  • 6 cups vegetable broth
  • 10.5 oz stale bread
  • 1 cup milk
  • 3.5 oz speck (cubed)
  • 3.5 oz flour
  • 2 eggs
  • to taste parsley
  • 1 pinch salt
  • 2 tablespoons extra virgin olive oil
  • 1.1 lbs mushrooms
  • 1 clove garlic
  • to taste parsley
  • to taste salt
  • 1.75 oz butter
  • to taste grated cheese

How to prepare Mushroom Dumplings

  • Let’s start preparing the Mushroom Dumplings. First, prepare the vegetable broth so that when the dumplings are ready, the broth will be ready to cook them. Cut the bread into small pieces and place it in a large bowl, add the milk, and mix well, letting it rest so it absorbs the milk and softens, stirring occasionally to make it smooth.

  • Cut the speck into small cubes, beat the eggs in a bowl with a fork, and chop the parsley.

  • Work the bread with your hands to get a uniform mixture, add the beaten eggs, flour, parsley, a pinch of salt, extra virgin olive oil, mix well, and let it sit for about ten minutes.

  • Now form the dumplings, taking portions of the mixture weighing about 1.75 oz each, forming dumplings by rolling the mixture between your hands, and as you prepare them, keep them aside on a plate.

  • Now that the dumplings are ready, you can cook them, place them in the boiling vegetable broth and let them cook for 15 minutes. Once ready, you will see they have increased in size, remove them from the heat and leave them in the broth.

  • While the dumplings are cooking, clean the mushrooms and cut the larger ones, prepare a chopped mixture of garlic and parsley, add 3 tablespoons of extra virgin olive oil to a pan, the garlic mixture, add the mushrooms, and let them cook for 10 minutes, stirring occasionally, season with salt and pepper and sprinkle with the parsley mixture. Continue cooking until the mushrooms are tender, the cooking time varies depending on the size and type of mushroom.

  • Finely chop the onion, place it in a pan, add the butter, put it on low heat, and let it soften. Now that the seasoning is ready, remove the dumplings from the broth and place them in the pan with butter and onion, let them flavor for a few minutes on low heat, if needed, add a few tablespoons of broth to soften, add the mushrooms and mix everything together, serve the Mushroom Dumplings hot, and if you like, add grated cheese.

How to store Mushroom Dumplings

Keep them in the refrigerator for 2/3 days, you can also freeze them
