Ingredients for making Lemon Pastry Cream

  • 2 Egg yolks
  • 1/2 cup Sugar
  • 1/4 cup Cornstarch (or flour)
  • 2 cups Milk (or plant-based milk)
  • 1 Lemon

How to make Lemon Pastry Cream

  • Let’s start preparing the Lemon Pastry Cream by pouring the yolks into a saucepan large enough to later contain all the milk.

  • Add the sugar to the yolks and beat them with a whisk, by hand or with an electric mixer, for a couple of minutes to make them fluffy. Then add the sifted cornstarch or flour, if you don’t have cornstarch, and keep mixing with the whisk to eliminate any lumps.

  • Add half of the milk, the grated lemon peel, and mix in a way that does not form lumps, then add the remaining milk. Put it on the heat and keep stirring, otherwise it will stick to the bottom. Within a couple of minutes, you will see that the pastry cream will start to thicken, keep stirring until completely thickened.

  • Remove from the heat, pour the lemon cream onto a plate or into a bowl, cover with plastic wrap, making it adhere well to the cream and let it cool at room temperature; this way, the Lemon Pastry Cream will not form a skin. Then store the cream in the refrigerator.
