- 4 Zucchini
- Extra virgin olive oil
- 1 clove Garlic
- Salt
How to Make Grilled Zucchini
Let’s start preparing the Grilled Zucchini, wash the zucchini and trim the ends. Slice the zucchini finely, about 1/8 to 1/6 inch thick, aiming for slices of the same thickness for even cooking, so use a sharp knife or a mandoline.
Heat the grill pan or skillet, and when it’s hot, lay the zucchini slices on it and let them cook for a couple of minutes, turning them to cook on both sides.
When they are cooked, place them on a serving platter, sprinkle with salt and pepper. If you have a garlic press, press the garlic clove to extract the juice and add it to a bowl; if not, finely chop the garlic clove.
Add a few tablespoons of extra virgin olive oil to the bowl with the garlic and mix with a fork to emulsify well.
Now pour the garlic-flavored oil over the freshly cooked and still warm zucchini and let it sit for half an hour before serving. Cover the Grilled Zucchini with plastic wrap.
