- 3.5 oz Speck
- 2 Eggs
- 4.25 cups Vegetable broth
- as needed Flour

How to prepare Dumplings in broth
Let’s start preparing the Dumplings in broth by first preparing the vegetable broth, about one quart. Cut the bread into pieces and soak it in milk for about ten minutes, and when it is soft, squeeze it well.
In the meantime, cut the speck into cubes and finely chop the parsley. Pour the squeezed crumb into a bowl, add the speck, a couple of tablespoons of flour, the eggs, and the chopped parsley.
Salt and pepper and mix everything to obtain a uniform and consistent dough. Form balls the size of a mandarin. Place the dumplings in the boiling broth and cook them for about 20 minutes; you will notice they will rise to the surface like gnocchi. Serve the dumplings in broth very hot.
