- 1 Savoy cabbage
- Extra virgin olive oil
- Salt
- Pepper
- 2.5 oz Onion
- 1 Zampone or cotechino (pre-cooked)
- 2 cups vegetable broth or bouillon
How to prepare the Savoy cabbage recipe with zampone or cotechino
Let’s start preparing the Savoy cabbage recipe with zampone Wash the cabbage and cut it into thin strips. Clean the onion and dice it.
Pour 4 tablespoons of extra virgin olive oil, the diced onion, and the cabbage cut into very thin strips into a pot, add a ladle of vegetable broth, cover with a lid, and let it cook for 40 minutes, stirring occasionally and adding more broth when necessary.
Pour cold water into a large pot and insert the zampone without removing it from its bag. Proceed with cooking according to the times indicated on the package, which is usually about 30 minutes.
