SIMPLE CHICKPEA FARINATA

Chickpea Farinata is a very easy recipe to make, typical of Genoa and perfect even for vegans, which is why it’s also called a vegan omelet, as it closely resembles an egg omelet but is completely plant-based and free of animal products. To make it easily digestible, I recommend absolutely doing the resting part of the preparation; by letting the mixture rest, it will become very light, and the chickpea flour will have time to absorb the water, making it homogeneous and creamier. Ingredients to prepare the Chickpea Farinata

  • 2 1/2 cups Chickpea Flour
  • 3 3/4 cups Water
  • 4 tbsps Extra Virgin Olive Oil
  • 1 pinch Salt

How to prepare the Chickpea Farinata

  • Let’s start preparing the chickpea farinata by pouring the chickpea flour into a bowl and slowly adding the water, incorporating it while stirring with a fork to prevent lumps from forming.

  • Cover the bowl with plastic wrap and let it rest at room temperature for 3 or 4 hours. Remember, not in the refrigerator. Do not skip the resting time; it will make the Farinata more digestible.

  • After the resting time, take the bowl, remove the foam that has formed, remove the plastic wrap, add the salt, the extra virgin olive oil, and mix to make the mixture homogeneous.

  • Grease a baking pan suitable for the oven with extra virgin olive oil, preferably non-stick, or wet a sheet of parchment paper with water, squeeze it well, lay it on the pan, and grease it with oil.

  • Pour the mixture we just prepared and bake in a preheated static oven at 428°F for 45 minutes.

  • When the chickpea farinata is cooked, take it out of the oven and serve it cut into wedges or rectangles according to the mold you used.
