Meatloaf Roll with Ham and Cheese

The meatloaf roll with ham and cheese is a tasty and simple main course to make, perfect for everyday dinners – with its gooey center, it’s a hit with kids – or for Sunday lunch. The rolled meatloaf is also a recipe that lends itself to numerous variations. I chose to stuff the meatloaf with a classic filling of cooked ham and cheese, but you can use vegetables, eggs, or any deli meats and cheeses you prefer.
With this recipe, you’ll get a meatloaf roll that you can slice thinly without risking it breaking completely: the meatloaf dough is the classic one with minced meat and parmesan, but instead of bread soaked in milk, I use breadcrumbs, which makes it more compact and easier to roll and slice once cooked (but it still needs to cool slightly before slicing). Easy and quick to prepare, the rolled meatloaf with ham and cheese is baked in the oven with a drizzle of oil, without the need to turn it during cooking.

Ingredients for a Stuffed Meatloaf about 10 inches

If you are celiac, besides using gluten-free breadcrumbs, make sure that the cooked ham also says ‘gluten-free’.

  • 14 oz ground beef
  • 3.5 oz cooked ham
  • 3.5 oz scamorza cheese (or other cheese of choice)
  • 1 egg (medium)
  • 1 bunch parsley
  • 1.75 oz Parmigiano Reggiano PDO (grated)
  • 1.75 oz breadcrumbs (for me gluten-free)
  • 1 pinch salt
  • 1 pinch nutmeg
  • 2 tbsps extra virgin olive oil

How to Prepare the Stuffed Meatloaf Roll with Cooked Ham and Cheese

  • To prepare the meatloaf roll with ham and cheese, start by putting the ground beef in a bowl; add a pinch of salt, a pinch of nutmeg, and a drizzle of oil (1). Mix briefly and also add the egg and chopped parsley (2). Blend them into the mixture, then add the Parmesan and breadcrumbs (3).

  • Mix well with your hands until you get a homogeneous mixture (4). Place a sheet of aluminum foil on the work surface and spread the mixture on it, forming a fairly thin rectangle (5). Lay the slices of cooked ham on top (6).

  • Cut the cheese into very thin slices – you can buy pre-sliced if you wish – and place it on top of the ham (7).

  • Using the aluminum foil, roll the meatloaf over itself from the longer side, pressing well to compact it (8). Once the meatloaf roll is formed, press the ends well to seal it (9).

  • Grease a baking dish (10) or a loaf pan with a drizzle of oil and place the meatloaf roll in it; drizzle more oil over its surface (11).

  • Bake the meatloaf roll with ham and cheese in the oven preheated to 350°F (static) for 30-40 minutes, then remove from the oven (12) and let it rest for about ten minutes before slicing.

  • Serve the meatloaf roll as a different second course, accompanied if you like with a tasty side dish such as cheesy spinach or crispy potatoes.

Storage

You can store the stuffed meatloaf with ham and cheese in the refrigerator for 2 or 3 days. Simply reheat it briefly in the microwave to melt the cheese again.

Tips and Variations

You can prepare the meatloaf roll using the ground meat you prefer: beef, veal, chicken, turkey, pork, or a mix of all of these.
Instead of cooked ham, you can use mortadella, smoked ham, turkey roast, or salami.
Instead of scamorza, you can use a very dry mozzarella, fontina, or classic processed cheese slices.
