Ingredients for Sweet and Sour Eggplants

  • 1.75 lbs eggplants
  • 4 tbsps extra virgin olive oil
  • 1/2 onion (small)
  • 1 tbsp sugar
  • 2 tbsps apple cider vinegar (or white wine vinegar)
