How to Make Robiola and Cooked Ham Tagliatelle
To prepare robiola and cooked ham pasta, start by putting the pot of water for the pasta on the stove. While waiting for it to boil, prepare the sauce: finely chop the onion. Then place it in a non-stick pan with the oil (1).
Turn on the stove to low heat and, as soon as it starts to fry, add the diced cooked ham (2). Let it brown over low heat for a couple of minutes (3), then turn off the heat.
When the water starts to boil, slightly salt it, then cook the pasta for 3-4 minutes if it’s fresh homemade pasta, otherwise for the time indicated on the package. One minute before draining, take some of its cooking water.
Put the chopped robiola in the pan, and mix it with a bit of the pasta cooking water (4). Turn the heat back on to low and let the robiola completely melt (5).
