Ingredients
- 4 sweet potatoes
- 5.3 oz bacon (cubed)
- 3.5 oz smoked scamorza cheese
- 1 oz grated parmesan (plus extra for sprinkling on stuffed potatoes)
- extra virgin olive oil
- salt
Preparation of Stuffed Sweet Potatoes
Gently wash the potatoes with the skin on, place them in a pot, cover with water, and bring to a boil.
Let them cook for about half an hour until they are cooked but still firm.
Drain them and let them cool, then cut them in half lengthwise.Use a teaspoon to scoop out the flesh, leaving a half-inch border from the skin, creating boats.
Gather the scooped flesh in a bowl and add the cubed bacon, diced smoked scamorza cheese, the 1 oz of grated cheese, and a pinch of salt, and mix thoroughly.Fill the potato boats with the obtained mixture and place them on a baking sheet lined with parchment paper.
Sprinkle them with a bit of parmesan and finish with a drizzle of extra virgin olive oil.
Bake in a preheated static oven at 430°F for twenty to twenty-five minutes (or in an air fryer at 400°F for fifteen minutes).
Remove from the oven, let cool slightly, and serve your stuffed sweet potatoes.
