Skillet Sweet Potatoes

Skillet sweet potatoes are a tasty side dish, easy and quick to make.

Based on sweet potatoes or American potatoes, also known as batatas, this is a very simple and quick side dish to prepare, with a very particular taste. The main use of the batata is to replace traditional potatoes. However, without detracting from the famous tuber present on tables all over the world, the sweet potato stands out for its definitely superior organoleptic and nutritional properties. American potatoes are not like classic potatoes: they are not tubers, but tuberous roots, so they have an elongated shape, pink-orange pulp, do not produce solanine and are rich in vitamins, minerals, and carotenoids, zero fats, few calories, and a halved glycemic index.

Ingredients

  • 1.76 lbs sweet potatoes (or American potatoes)
  • 1 clove garlic
  • rosemary
  • paprika
  • extra virgin olive oil
  • salt

Preparation of Skillet Sweet Potatoes

  • Peel the potatoes and cut them into chunks.
    Peel the garlic.

  • In a large skillet, heat a base of extra virgin olive oil and brown the garlic.
    Add the potatoes, season them with some rosemary, paprika, and salt, and mix thoroughly.

  • Add a little water, cover with a lid, and let cook for about ten minutes, until the potatoes are tender.
    Remove the lid and increase the heat to dry the cooking base.
    Serve your skillet sweet potatoes hot.
