The kissed pizza is a delicious white pizza, crispy on the outside and soft on the inside thanks to a good alveolation, baked in the oven and perfect for filling.

It is a pizza folded over itself, in a half-moon shape, that opens easily without breaking and can be filled in a thousand ways, according to your tastes, with cold cuts, cheese, vegetables, or whatever your imagination suggests. Simple to make even without a mixer.

Ingredients

  • 4 cups all-purpose flour
  • 1.6 cups water
  • 2 tsp sugar
  • 2 tsp salt
  • 1 tsp dry yeast
  • extra virgin olive oil

Preparation of the kissed pizza

  • In a large bowl mix the flour, sugar, and salt.
    Add the dry yeast and mix again.
    Make a well in the center and pour in 2 tbsps of extra virgin olive oil and the water at room temperature.

  • Knead until you get a smooth and homogeneous dough.
    Place the dough in an oiled bowl, cover the bowl with plastic wrap and let rise in a warm, sheltered place for a couple of hours, until doubled.

  • At the end of the rising process, divide the dough into four equal parts and work each of the four parts by kneading and folding the edges inwards to form balls.
    Cover them with a cloth and let them rest for another twenty minutes.
    After this second rising phase, roll out each ball into a disc about 9 inches in diameter.

  • Oil the surface and fold the discs, aligning the edges but not flattening them, forming half-moons.
    Place each half-moon on a baking sheet lined with parchment paper, keeping them apart and finish with a drizzle of oil on the surface.
    Bake in a preheated static oven, at 482°F for about seven minutes, until golden.
    Remove from the oven, let cool slightly, and fill your kissed pizzas according to your taste with cold cuts, cheese, or vegetables.
