Ingredients
- 1.76 lbs pumpkin
- 1.76 lbs potatoes
- 1 shallot
- 3 tbsp butter
- parsley
- vegetable broth
- extra virgin olive oil
- salt
Preparation of Pumpkin and Potato Soup
Clean the pumpkin by removing the skin, seeds, and fibers, and cut it into small cubes.
Peel the potatoes and cut them into cubes of the same size as the pumpkin.
Thinly slice the shallot.Melt the butter in a pot, add the shallot and let it wilt.
Add the pumpkin and potato cubes and stir to flavor them, then cover everything with vegetable broth.Cook for twenty minutes, stirring occasionally.
At the end of cooking, adjust the salt and serve your pumpkin and potato soup garnished with some chopped parsley and a drizzle of extra virgin olive oil.
