Pumpkin and Mozzarella Pie

The pumpkin and mozzarella pie is a delicious light main course and easy to make.

It’s a simple dish, with few ingredients, based on slices of pumpkin and mozzarella enriched with grated cheese and, optionally, aromatic herbs. It is prepared quickly and bakes in the oven, releasing an irresistible and comforting aroma, perfect for a family dinner on autumn evenings.

Ingredients

  • 21 oz pumpkin
  • 7 oz mozzarella
  • grana (grated)
  • extra virgin olive oil
  • salt

Preparation of Pumpkin and Mozzarella Pie

  • Clean the pumpkin and slice it into slices about half an inch thick.
    Also slice the mozzarella.
    Oil a baking dish and create a layer with pumpkin slices at the bottom.

  • Salt and sprinkle with a bit of grated grana, then cover with some mozzarella slices.
    Create a new layer of pumpkin, salt, sprinkle with grated cheese, then add a layer of mozzarella and so on, ending with a layer of pumpkin.
    Salt, sprinkle with grated grana and finish with a drizzle of extra virgin olive oil.

  • Bake in a preheated static oven at 356°F for twenty minutes, then raise the temperature to 392°F and bake for another twenty minutes.
    Remove from the oven, let cool slightly and serve your pumpkin and mozzarella pie.
    You can flavor it according to your taste by adding rosemary, chopped parsley, or sage to the pumpkin layers.
