Ingredients

  • 2.2 lbs potatoes
  • 10.5 oz datterino tomatoes
  • 2 onions (large)
  • oregano (chopped)
  • rosemary (chopped)
  • sage (chopped)
  • extra virgin olive oil
  • salt

Preparation of Calabrisella Potatoes

  • Peel the onions and slice them.
    Gather them in a bowl and cover with cold water.
    Let them rest for half an hour.
    Meanwhile, peel the potatoes, cut them into wedges, place them in a bowl and also cover with cold water.

  • Wash the cherry tomatoes, dry them and cut them into wedges, collecting them in a bowl.
    Drain the onions, dry them, and add them to the cherry tomatoes.
    Drain the potatoes with a colander and rinse them under running water to remove excess starch.
    Dry them and add them to the cherry tomatoes and onion.

  • Season with chopped oregano, sage, and rosemary, plenty of extra virgin olive oil, and salt, mixing thoroughly.
    Pour everything into a baking dish and bake in a preheated fan oven at 392°F for about forty minutes: check cooking after half an hour and adjust according to your taste.
    Remove from the oven, let cool slightly and serve your Calabrisella potatoes.
