Peanut Butter Cookies

Peanut butter cookies are delicious treats made with peanut butter, lactose-free, yeast-free, and gluten-free, incredibly easy to prepare.

Known as peanut butter cookies, they are protein cookies of American origin, born in the early twentieth century, with a rich and balanced taste between sweet and salty, featuring the characteristic grid on the surface, obtained with a simple fork. Crunchy on the outside, soft inside, and rustic, they are perfect for breakfast or a snack, to accompany milk or coffee, and are made with very few ingredients, in just a few steps and little time.

Ingredients

  • 1 cup peanut butter (click for the easy recipe to make it at home)
  • 1 egg
  • 1/2 cup brown sugar
  • 2 tbsps cornstarch

Preparation of Peanut Butter Cookies

  • In a large bowl, mix all the ingredients until you obtain a homogeneous mixture.
    Line a baking sheet with parchment paper.
    With damp hands, form balls the size of a walnut and place them on the baking sheet, keeping them well spaced.

  • Use a fork: gently press the balls with the back of the fork, first in one direction and then a second time perpendicularly to the first, so as to create a kind of grid on the surface of your peanut butter cookies with the grooves created by the fork.

  • Bake in a preheated oven at 350°F for ten minutes.
    Remove from the oven and let the cookies cool before removing them from the baking sheet and storing them in a tin or airtight container.
