Risotto-style Pasta with Zucchini

Risotto-style pasta with zucchini is a tasty first course, easy and quick to make, and very appetizing.

Just a few simple ingredients and one pot to cook it, as if it were a risotto, cooking the pasta directly in the sauce (this is the ‘risottatura’ technique). The result is a creamy first course without needing to add special ingredients, simple, rich in flavor and suitable for the whole family, young and old, for everyday lunch or dinner.

Ingredients

  • 8.8 oz pasta (short)
  • 14 oz zucchini
  • 1 clove garlic
  • grana cheese (grated)
  • extra virgin olive oil
  • salt

Preparation of Risotto-style Pasta with Zucchini

  • Wash the zucchini, trim them, and grate using a coarse grater.
    Peel the garlic clove and brown it with a drizzle of extra virgin olive oil in a large pot.

  • Add the grated zucchini, salt, and cook over high heat for five minutes, then add two glasses of water.
    Bring to a boil, add the pasta, and cook for the time indicated on the package, adding more water if needed.

  • When the pasta is cooked, add the grated cheese and mix everything.
    Serve immediately, nice and hot, your risotto-style pasta with zucchini.
