Ingredients

  • 1 sheet puff pastry
  • 17.5 oz pumpkin flesh
  • 3.5 oz stracchino
  • walnuts
  • 1 clove onion
  • rosemary
  • extra virgin olive oil
  • salt

Preparation of the Savory Pumpkin, Stracchino, and Walnut Tart

  • Cut the pumpkin into cubes.
    Chop the onion.
    Heat a few tablespoons of extra virgin olive oil in a skillet and let the onion brown.

  • Add the pumpkin cubes and some rosemary and let cook until the pumpkin softens (it will take about ten minutes).
    Adjust with salt and set aside.

  • Unroll the puff pastry, keeping it on the same parchment paper it comes with, place it in a baking dish, and prick the bottom with a fork.
    Spread the prepared pumpkin over the pastry, add scattered pieces of stracchino, and broken walnuts.

  • Sprinkle with some more chopped rosemary and fold the edges of the pastry towards the center.
    Bake in a preheated ventilated oven at 356°F for about twenty-five minutes, until golden brown.
    Remove from the oven, let it cool slightly, and serve your savory pumpkin, stracchino, and walnut tart.
