Ingredients

  • 1 lb potatoes
  • 5 oz Parmesan cheese (grated)
  • extra virgin olive oil
  • salt
  • cherry tomatoes
  • prosciutto
  • mozzarella
  • arugula

Preparation of the Fake Potato Flatbread

  • Peel the potatoes, wash them under running water, and slice them with a mandoline or a smooth-bladed knife into very thin slices.
    Cover the baking sheet with parchment paper.
    Brush a little oil on the paper forming circles about eight inches wide and cover them with the potato slices slightly overlapping each other.

  • Season with a pinch of salt and cover them completely with grated Parmesan.
    Bake in a static oven at 375°F for about thirty minutes, until golden.

  • Remove from the oven and blot the cooking bottom created with kitchen paper, then let the potatoes cool slightly, gently detach them from the parchment paper, and place them on a plate with the cheese side facing the plate itself.
    Stuff as desired or with the ingredients suggested in the recipe, fold them over themselves and serve.
