Mediterranean Friggitelli Peppers

Mediterranean friggitelli peppers are a delicious side dish, easy and full of flavor.

The sweet green peppers create a delightful combination with the Mediterranean flavors of simple ingredients like tomatoes, capers, olives, red onion, and basil, in a dish that is very easy to prepare and very tasty, suitable to accompany any type of dish, whether meat, fish, or cheese-based, but also enjoyable on its own with some good homemade bread.

Ingredients

  • 7.76 oz friggitelli peppers
  • 5.29 oz cherry tomatoes
  • Half red onion
  • 1.41 oz pitted black olives
  • 1 tbsp capers in salt
  • basil
  • extra virgin olive oil
  • salt

Preparation of Mediterranean Friggitelli Peppers

  • Wash the peppers, dry them, and remove the top and seeds.
    Place them in a baking dish.
    Wash the cherry tomatoes, cut them in half, and add them to the peppers.

  • Slice the onion and desalinate the capers.
    Add everything to the baking dish along with the olives, season with extra virgin olive oil, salt, and a few basil leaves, and mix well.

  • Bake in a preheated ventilated oven at 356°F (180°C) for twenty-five minutes, adding a bit of water during cooking if necessary should the cooking base dry out too much.
    Remove from the oven, let cool slightly, and serve your Mediterranean friggitelli peppers.
