Pasta with Zucchini and Burrata Cream

Pasta with zucchini and burrata cream is a tasty vegetarian first course, easy to make and very delicious.

Ingredients

  • 17.6 oz fresh pasta (maritati or orecchiette or strozzapreti, etc.)
  • 17.6 oz zucchini
  • 8.8 oz burrata
  • 1 clove garlic
  • basil
  • mint
  • extra virgin olive oil
  • salt

Preparation of Pasta with Zucchini and Burrata Cream

  • Wash the zucchini, trim them, and cut them into thin slices.
    Peel the garlic and brown it in a large pan with a little extra virgin olive oil.
    Add the zucchini, adjust the salt, and add some torn basil and mint leaves.

  • Let cook over medium heat for about ten minutes.
    Meanwhile, cook the pasta al dente in plenty of salted boiling water.
    At the end of the zucchini cooking, blend half of them with half of the burrata until a smooth cream is obtained.
    Drain the pasta keeping a little of its cooking water aside.

  • Add it to the pan with the zucchini with zucchini and burrata cream and mix thoroughly, adding, if necessary, a little of the reserved cooking water.
    Plate your pasta with zucchini and burrata cream, completing each dish with a spoonful of the remaining burrata and serve.
