Ingredients

  • 1.3 lbs sea bream fillets
  • 1 cup white wine
  • flour
  • butter
  • parsley
  • extra virgin olive oil
  • salt

Preparation of Sea Bream Scaloppine with White Wine

  • Rinse the fillets under running water and then remove the bones with tweezers.
    Put some flour on a flat plate and coat the fillets on all sides, ensuring it adheres well.
    In a large pan, heat a knob of butter with a tablespoon of extra virgin olive oil.

  • Place the fillets without overlapping them, skin side up, and let them cook for a minute, then gently flip them over.
    Let them cook for a couple of minutes, then deglaze the fish with white wine.

  • Let the cooking liquid evaporate, turn off the heat, season with salt, and sprinkle with chopped parsley.
    Serve your sea bream scaloppine with white wine immediately.
