Ingredients
- 4.2 oz pavesini
- 8.8 oz mascarpone
- 1 cup whipping cream
- 2.8 oz mint syrup
- 2.1 oz coconut flour
- cup milk
- 1 oz mint syrup
- coconut flour
- mint leaves
Preparation of the Pavesini Coconut and Mint Cake
In a large bowl, place the mascarpone and mint syrup and begin to beat with an electric mixer.
Gradually add the well-chilled liquid whipping cream from the refrigerator, continuing to beat until you have a fluffy, thick, and homogeneous mixture.
Add the coconut flour and beat for a few more minutes to incorporate it.Prepare the soak by mixing the milk with the mint syrup.
Line a 9 x 7 inch baking tray with two sheets of plastic wrap.
Quickly dip some Pavesini in the soak, placing them in a single layer on the bottom of the tray to completely cover the bottom and sides of the tray.Pour the mixture of mascarpone, cream, mint, and coconut on top and level it.
Cover with another layer of Pavesini soaked in the milk and mint syrup soak until you close the cake.
Seal the cake with plastic wrap and let it rest in the freezer for an hour (or in the refrigerator for a couple of hours).
When serving, transfer it to a tray, remove the plastic wrap, and sprinkle it with some coconut flour.
Decorate with a few mint leaves and serve your Pavesini coconut and mint cake.
