Potato and Onion Puff Pastry Tart

Ingredients

  • 1 roll puff pastry (round)
  • 14.1 oz potatoes
  • 1 onion
  • Parmesan (grated)
  • rosemary
  • oregano
  • extra virgin olive oil
  • salt

Preparation of the Potato and Onion Puff Pastry Tart

  • Peel the potatoes and cut them into very thin slices with the help of a mandolin.
    Gather them in a bowl and cover them with cold water.
    Peel the onion and slice it thinly.
    Unroll the puff pastry with all the baking paper that contains it and place it in a 11-inch diameter baking pan.

  • Prick the bottom of the pastry with a fork.
    Distribute the onion slices on the pastry.
    Cover them with the potato slices arranged slightly overlapping to cover the entire surface of the pastry.
    Season with salt, chopped oregano, chopped rosemary, and a drizzle of extra virgin olive oil.

  • Gently fold the edges of the pastry inward.
    Sprinkle with a bit of grated Parmesan and bake in a preheated static oven at 392°F for about half an hour until golden brown.
    Remove from the oven, let it cool slightly, and serve your potato and onion puff pastry tart.
