Grilled Eggplant Roll

The grilled eggplant roll is a tasty appetizer or main course, very easy to make.

Stuffed with cooked ham and scamorza cheese, melty and irresistible, simple to make, it’s a very flavorful summer dish perfect for any occasion.

Ingredients

  • 1.75 lbs eggplant (one large)
  • 3.5 oz cooked ham (sliced)
  • 3.5 oz scamorza cheese
  • 1 tbsp grated cheese
  • breadcrumbs
  • extra virgin olive oil
  • salt

Preparation of the Grilled Eggplant Roll

  • Wash the eggplant, remove the stem, and cut it into slices.
    Grill the slices on a hot griddle.
    Salt them.

  • Place a sheet of parchment paper on the work surface, brush it with a little oil and arrange the grilled eggplant slices, slightly overlapping them to form a rectangle.
    Sprinkle the eggplants with the grated cheese, then distribute the cooked ham and sliced scamorza cheese over them.

  • Using the parchment paper, roll along the longest side of the rectangle until you obtain a roll and sprinkle it with breadcrumbs.
    Transfer it to a baking tray covered with parchment paper, drizzle with a bit of extra virgin olive oil, and bake in a preheated static oven at 356°F (180°C) for fifteen minutes.
    Bake, let it cool slightly, and serve your grilled eggplant roll sliced.
