Sant’Agata Spaghetti

Sant’Agata spaghetti is a delicious first course of Sicilian, Catanese origins, easy and very quick to prepare.

With tuna, olives, and sun-dried tomatoes, simple ingredients almost always present in the pantry, they are prepared in the time it takes to cook the pasta and are full of flavor, perfect as a lunch or dinner saver.

Ingredients

  • 11 oz spaghetti
  • 11 oz canned tuna
  • 3.5 oz sun-dried tomatoes
  • 2.1 oz black olives (pitted)
  • 1 shallot
  • parsley
  • extra virgin olive oil
  • salt

Preparation of Sant’Agata Spaghetti

  • Bring a large pot of water to a boil for cooking the pasta.
    Chop the shallot.
    Drain the tuna from its preservation oil and break it up coarsely.
    Heat a base of extra virgin olive oil in a large pan or wok and let the chopped shallot brown.

  • Add the tuna and let it flavor for a few minutes.
    Add the sun-dried tomatoes cut in half and the pitted black olives, stir, adjust the salt, and sprinkle with a bit of chopped parsley.
    Let it cook for a few minutes and meanwhile, cook the spaghetti al dente in salted water.

  • Drain the spaghetti, keeping aside some of their cooking water, and add them to the dressing.
    Let them sauté for a few minutes, stirring thoroughly and adding the reserved cooking water if the pasta becomes too dry.
    Serve your Sant’Agata spaghetti immediately.
