Mediterranean Style Gnocchetti

Mediterranean style gnocchetti are a delicious first course, easy and quick to make, vegetarian, light, and tasty.

Inspired by the typical flavors of the Mediterranean diet, flavorful and rich in taste, with few simple fresh and aromatic ingredients, they are a perfect dish for all occasions, from Sunday lunch or everyday meals to family dinners or gatherings with friends.

Ingredients

  • 1.1 lbs potato gnocchetti
  • 1 cup cherry tomatoes
  • 2.8 oz salted capers
  • 1 clove garlic
  • oregano
  • parsley
  • extra virgin olive oil
  • salt

Preparation of Mediterranean Style Gnocchetti

  • Wash the cherry tomatoes and cut them into wedges.
    Desalt the capers.

  • Peel the garlic clove.
    In a large pan, heat a few tablespoons of extra virgin olive oil and let the garlic clove brown.
    Add the cherry tomatoes, desalted capers, and some oregano and let cook for about ten minutes, adjusting the salt.

  • Cook the gnocchetti in plenty of salted boiling water.
    As soon as they rise to the surface, scoop them out with a slotted spoon and pour them into the pan with the sauce, mixing thoroughly.
    Sprinkle with chopped parsley and serve your Mediterranean style gnocchetti.
