Zucchini Casserole

The zucchini casserole is a tasty main dish, easy and quick to prepare.

Ingredients

  • 2 zucchini (large)
  • 1.75 oz cooked ham (sliced)
  • 4.25 oz mozzarella
  • 1.75 oz breadcrumbs
  • 1.4 oz grana cheese (grated)
  • extra virgin olive oil
  • salt

Preparation of the Zucchini Casserole

  • Wash the zucchini, trim them, and slice them thinly, just a few millimeters, along the longest side using a mandoline.
    In a small bowl, mix the breadcrumbs and grated cheese.
    Chop the mozzarella into pieces and shred the cooked ham.

  • Grease a baking dish and place the zucchini in it.
    Sprinkle with the shredded ham and mozzarella pieces.
    Top with the breadcrumb and grated cheese mix and finish with a drizzle of extra virgin olive oil.

  • Bake your zucchini casserole in a preheated ventilated oven at 375°F for fifteen to twenty minutes, until the mozzarella is melted and the top of the casserole is golden brown.
    Remove from the oven, let rest for a few minutes, and serve.
