Pasta with Sun-dried Tomatoes and Fior di Latte

Ingredients

  • 14 oz pasta (short)
  • 5 oz oil-packed sun-dried tomatoes
  • 7 oz fior di latte mozzarella
  • 3.5 oz smoked scamorza
  • 4 tbsp cooking cream
  • 1 clove garlic
  • parsley
  • extra virgin olive oil
  • salt

Preparation of Pasta with Sun-dried Tomatoes and Fior di Latte

  • Drain the tomatoes from their oil and cut them into pieces.
    Cut the mozzarella and scamorza into cubes.
    Peel the garlic clove.

  • Heat a little extra virgin olive oil in a large pan or wok and let the garlic brown.
    Add the tomatoes and let them flavor for a few minutes, remove the garlic clove, and then turn off the heat.
    Cook the pasta al dente in plenty of boiling salted water.
    Drain the pasta, keeping aside some of the cooking water, pour it into the pan with the tomatoes, and mix well.

  • Add the mozzarella, cooking cream, and scamorza, and stir over low heat, adding some of the reserved pasta water if necessary.
    When the cheeses are melted, turn off the heat and add some chopped parsley, stirring again.
    Serve your pasta with sun-dried tomatoes and mozzarella immediately.
