The Aeolian salad is a delicious Sicilian-origin salad, easy to make and full of flavor.
Simple ingredients and irresistible taste for a salad that can be a side dish to accompany any type of dish, or a main course, maybe enjoyed with slices of homemade bread, fresh and perfect for the hottest days of summer, very simple to prepare.

Ingredients
- 3 medium potatoes
- 5.3 oz tuna in oil
- 8 cherry tomatoes
- olives
- basil
- oregano
- 1 clove red onion
- white wine vinegar
- extra virgin olive oil
- salt
Preparation of the Aeolian Salad
Wash the potatoes, place them in a small pot, cover with water and bring to the stove.
Let them cook for about twenty-five minutes from boiling, until they are easily pierced with a fork, then drain and let cool.Slice the onion clove into thin slices and soak in water and white wine vinegar for about twenty minutes, then drain.
Peel the potatoes and cut them into chunks, placing them in a salad bowl.Wash the cherry tomatoes, cut them into wedges, and add them to the potatoes.
Add the onion, some torn basil leaves, a handful of green and black olives, oregano, salt, and a drizzle of extra virgin olive oil, and mix thoroughly.Also add the tuna well drained from the preservation oil.
Let your Aeolian salad marinate for at least thirty minutes, then serve.
