Air fryer stuffed eggplants are a delicious main course, light, easy, and quick to prepare.

Ingredients
- 1 eggplant
- 1/2 cup tomato sauce
- 2.5 oz mozzarella
- 2.5 oz cooked ham
- extra virgin olive oil
- salt
Preparing Air Fryer Stuffed Eggplants
Wash the eggplant and dry it.
Cut off the stem and slice it in half lengthwise.
Score the flesh with a knife making diagonal grid cuts.
Oil the surface of the flesh ensuring the oil penetrates the cuts, then place the two halves in the air fryer and cook at 356°F for fifteen minutes.Let cool slightly, then using a teaspoon or melon baller, remove the flesh creating two eggplant boats.
Collect the flesh in a bowl and mash it with a fork.
Add the tomato sauce, reserving a few tablespoons for the final garnish.
Chop the cooked ham and add it to the flesh along with a pinch of salt, then mix thoroughly.
Cut the mozzarella into pieces.Stuff the boats with the seasoned flesh, distribute the mozzarella over the surface of the eggplants, and finish with the reserved tomato sauce.
Place the boats back in the air fryer and cook for another five minutes at 356°F to melt the mozzarella.
Serve your air fryer stuffed eggplants immediately.
