Spaghetti ru Marranzanu

Spaghetti ru Marranzanu is a creamy Sicilian first course, easy and quick to make and very tasty.

The peculiarity of this dish comes from the fact that the sauce is completely raw, you just need to cook the spaghetti. The other ingredients are simple, humble, and give a sublime flavor to this first course, which is very quick to make. The marranzanu, also known as marranzano or scacciapensieri, is a typical Sicilian musical instrument made of wrought iron, whose name comes from referring to crickets due to its monotonous and repetitive sound.

Ingredients

  • 12 oz spaghetti
  • 5 fillets anchovies
  • 20 black olives (pitted)
  • 1 tbsp capers
  • 2 cloves garlic
  • parsley
  • pecorino (grated)
  • breadcrumbs
  • extra virgin olive oil
  • salt

Preparation of Spaghetti ru Marranzanu

  • Bring a pot of water to the boil for cooking the spaghetti.
    Meanwhile, chop the anchovy fillets and put them in a large bowl.
    Add a generous amount of extra virgin olive oil.

  • Chop the garlic cloves and add them.
    Add the capers, pitted black olives, and a bunch of chopped parsley.
    Add a pinch of salt and mix thoroughly.

  • Cook the spaghetti al dente after salting the water and drain them, reserving some of the cooking water.
    Add them to the bowl and add plenty of grated pecorino and breadcrumbs. Mix thoroughly, adding some of the reserved pasta cooking water if necessary to achieve a creamy sauce.
    Serve your Spaghetti ru Marranzanu immediately.
