Ingredients
- 4 fillets cod
- 2 boiled potatoes
- 8.8 oz peeled cherry tomatoes
- 6 fillets anchovies in oil
- 1 tbsp salted capers
- 1 clove garlic
- 3.4 fl oz white wine
- parsley
- extra virgin olive oil
- salt
Preparation of Cod Stew
Rinse the cod fillets under running water and remove any bones.
Chop the anchovies and crush the garlic clove.
Desalt the capers.Dice the boiled potatoes.
In a large pan, heat a base of oil and brown the garlic clove with the chopped anchovies.
Add the capers.
Add the cod fillets and brown them on both sides.Deglaze with the white wine.
Add the peeled cherry tomatoes and stir gently.
Add the diced boiled potatoes and adjust the salt.
Let cook for about ten minutes until the cod is tender.
Serve your cod stew with a bit of chopped parsley and a drizzle of extra virgin olive oil.
