Air fryer stuffed zucchini is a tasty main course that is easy and quick to make.
Simple and ready in about half an hour between preparation and cooking, thanks to the air fryer, which does not generate the same heat as the oven, making them ideal for summer, flavorful, and delicious.

Ingredients
- 4 zucchini
- 3.5 oz provolone cheese (or smoked cheese)
- 1.75 oz mortadella
- 3.5 oz bread crumbs
- 1 egg
- 1.75 oz Parmesan (grated)
- basil
- breadcrumbs
- extra virgin olive oil
- salt
Preparation of Air Fryer Stuffed Zucchini
Wash the zucchini and cut them in half lengthwise.
Boil them in salted water for a few minutes, then drain and let them cool.
Scoop out the interior gently with a teaspoon or a small scoop without breaking the skin.Put the scooped-out flesh in a bowl and set aside the zucchini boats you have created.
Break the bread into pieces, also chop the provolone and mortadella into small pieces, and add them to the zucchini flesh.
Add the egg, grated Parmesan, some chopped basil leaves, and a pinch of salt, and mix thoroughly.Use the mixture to fill the boats, sprinkle them with some breadcrumbs, place them in the air fryer basket, and spritz with a little oil.
Cook at 338°F for fifteen minutes.
Serve your air fryer stuffed zucchini hot or warm.
