Ingredients
- 3 zucchini
- 5.3 oz cooked ham (sliced)
- 5.3 oz mozzarella
- breadcrumbs
- extra virgin olive oil
- salt
Preparation of Crispy Zucchini Rolls
Wash the zucchini, trim them, dry them, and slice them lengthwise with the help of a mandoline to a thickness of about 1/8 inch.
Place some breadcrumbs on a flat plate and mix it with a pinch of salt.Brush the zucchini slices with some extra virgin olive oil and pass them in the breadcrumbs, making it adhere well on all sides.
Place the slices thus prepared in a baking pan lined with parchment paper without overlapping them and bake in a preheated static oven at 375°F for twenty minutes, turning them halfway through cooking.
Cut the mozzarella into slices.At the end of cooking, stuff each slice with a strip of cooked ham and a slice of mozzarella and roll them up on themselves. Secure them with a toothpick.
Put them back in the pan and cook them at the same temperature for about ten more minutes, until the mozzarella has melted, and your crispy zucchini rolls are golden brown.
Serve them immediately, hot and stringy.
