It is a cake inspired by the French flan.
It is a baked vanilla pudding that acquires a consistency allowing it to be sliced, but melts in the mouth, delicious and light, without flour, but with simple ingredients like eggs, milk, and sugar.

Ingredients
- 4 1/4 cups milk
- 4 eggs
- 3/4 cup sugar
- 3/4 cup potato starch
- 1 teaspoon vanilla extract (or the seeds of one vanilla bean)
Pudding Cake Preparation
Put the milk in a saucepan with the vanilla extract and bring it to a boil.
Meanwhile, in a bowl, mix the potato starch and sugar.Add the eggs and whisk until you obtain a smooth and homogeneous mixture without lumps.
Gradually add the boiling milk while stirring continuously, then return the mixture to the heat for a few minutes.Pour it into a well-greased cake pan and bake in a preheated static oven at 350°F for forty minutes.
Remove from the oven and let cool completely, then transfer your pudding cake to the refrigerator to set for at least a couple of hours before serving.
