Ingredients
- 3 zucchini (medium)
- 3.2 oz speck (slices)
- 7.1 oz smoked cheese (or provolone)
- 1 cup breadcrumbs
- grana cheese (grated)
- parsley
- extra virgin olive oil
- salt
Preparation of the Zucchini Cake in Air Fryer
Wash the zucchini, trim them, and cut them into very thin slices lengthwise with the help of a mandoline or smooth-bladed knife.
In a deep dish, mix the breadcrumbs with grated cheese, a pinch of salt, and chopped parsley.
Cut the smoked cheese into thin slices.Brush the zucchini slices with some oil and dip them in the breadcrumb mixture, covering all sides.
Place a layer on the bottom of a tray suitable for the air fryer, cover with slices of speck and smoked cheese, then make another layer of breaded zucchini, speck, and smoked cheese and so on, until ingredients run out, ending with a layer of zucchini (always brushed with oil and coated in the breadcrumb mixture).Cook in the air fryer at 356°F for fifteen minutes.
Serve immediately, nice and hot and gooey, your zucchini cake in the air fryer.
